Phone camera is trash. Remember that steak-off some of us had on HMF back in the day and mine wouldn't capture the pink in the steak I cooked? Looked medium well when it was rare/medium rare...

The method I developed for cooking a sirloin a million times...
High heat, oil in
Once the pan starts to smoke, turn to a medium/medium high heat (65-70% of stove's fire capacity)
Sit for 3-7 minutes, depending on the thickness of the cut
flip
About 90 seconds before finish, cut off a few butter squares, add to the pan and let it melt.
Put steak on the plate
Fuck A1 sauce, pour the remaining juices from the steak/butter/oil on top of the steak for GOAT flavor
Let sit for two minutes
Rape steak
High heat, oil in
Once the pan starts to smoke, turn to a medium/medium high heat (65-70% of stove's fire capacity)

flip

Usually better to oil the steak and put it in the hot dry pan.

OH! And the most important thing I left out... ROOM TEMPERATURE.
Cooking a steak right out of the fridge is a big no-no. Normally I would let it sit, but it really takes quite a long take for the steak to get to room temperature, so I will get a ziplock bag, put the steak in and run hot water over the ziplock bag for a minute or two. Gets the steak nice and loose to hold in all that flavor.
